Eggnog Punch

Growing up, eggnog wasn't a part of my families Christmas traditions.  My mom and dad didn't like it, so I had never even tried it.  The first Christmas after I was married I was introduced to my mother-in-law's eggnog punch.  I have never gone back!  

This is a great way to prepare eggnog for a large group and is a family friendly treat.

Cranberry Orange Macadamia Bars

My husband loves the seasonal Cranberry Bliss Bars from Starbucks, so I thought I would try to make something similar for him at home.  Most of the recipes I looked at used dried cranberries and orange extract, neither of which I love in my baked goods, so I baked a batch using fresh cranberries and the zest of a couple of clementine mandarins.  I also have a thing for nuts in my baked goods, so I had to throw in some macadamia nuts too!

Sweet Honey Cornbread Muffins

Cornbread is something I thought I hated as a child.  I don't remember ever trying it, but for some reason I convinced myself well into adulthood that I was not a fan.  Mayonnaise and guacamole are two other things on that list, but I was smart enough to come around quicker to those two.

A few years ago I decided to try corn bread that was served at a restaurant and I have never turned back.  After trying and toying with a few different recipes, I have found that I love cornbread that is sweetened with honey, even though I am not a huge fan of honey.  Go figure.  This recipe is quick, easy, sweet, and my go to cornbread recipe anytime I make a pot of chili

Easy One Pot Chili

I had been married for 15 years before I made my first batch of chili.  I grew up eating my grandmother's amazing chili, but her recipe started with soaking beans overnight to make ham hock and pinto bean soup the next day, then using the left over soup the following day to make chili.   Three day chili soup is really delicious.  Win a chili cook off delicious.  But not really a recipe meant for moms that don't plan dinner ahead of time and have kids that won't eat ham hock and pinto beans soup.

But one day I decided that I did want to make chili and I would use canned beans and just not tell my grandmother.  This is the quick and easy and still really yummy chili recipe that I use when the weather gets cold and rainy.  It is great with cornbread, perfect with tortilla chips, and just right for making walking Frito pies!

The Best Banana Muffin Recipe

I have baked a batch of banana muffins every week since school started.  It is a combination of just having a lot of bananas turning too quickly and trying to have something for my teenage son to pack in his post cross country practice breakfast.  I have tried a bunch of different recipes and combined a few and I think I have found my families all time favorite.

3 Healthy Chicken Recipes To Try [Healthy Recipes]

I feel like my kitchen repertoire is getting pretty boring, so I thought I would dig up a couple of easy chicken recipes to add to the rotation this week.  Our Spring schedule is insanely busy, so when I say easy, I mean easy.  Like already have the ingredients in the house, cook everything in one pan, and no need to marinate because that would require me to think about dinner at least an hour before I start cooking it.

The next time we have quinoa for dinner, I am going to make sure to make some extra so I can try this quinoa crusted chicken recipe from Closet Cooking.  I probably won't make it as chicken parmesan, since I have kiddos that don't love red sauce, but I can think of a few recipes that use bread crumbs that could use a quinoa makeover.


I am exited to try hummus-crusted chicken recipe from Gimme Some Oven.  We love hummus and I imagine it keeps the chicken really moist.  Not to mention the recipe is super easy because you can use store bough hummus.


Baked ranch chicken uses fat free sour cream, corn flakes, and ranch seasoning for the coating.  Another quick and easy chicken recipe that uses items I probably already have in my house and isn't completely boring.  You can get the recipe for this one over at Laa Loosh.
