Healthy Halloween Snacks

Halloween is full of sugar, so it is always nice to have some festive snacks that are a little healthier than a cupcake on hand.

Kellie from Little Nummies posted some fun cracker eyeballs over at Snack Picks.  My favorite are the banana and peanut butter version:

Food Junction has a lot of fun ideas, my favorite being the olive and gooseberry skewers:

Fruit salad jack-o-lanterns from Family Fun are a great pre trick or treat snack or a fun addition to the dinner table:

Banana Ghosts rolled in coconut from junimond:

These meaty fingers from Super Healthy Kids are made from pretzels, ham and an almond, but I am going to replace the pretzel with a cheese stick and serve these for lunch on Halloween:

Do you have any healthy snacks or appetizers that you plan on serving on Halloween?

Mini Pancake Appetizers

I am in the process of planning a pancake breakfast for our church later this month.  I am really sad that it is completely unreasonable to serve these:

Buffalo Chicken Dip

So a LOT of the fun of New Years Eve is the fun appetizers!

Buffalo Chicken Dip

What you need:
2 pkg cream cheese, 8 oz - softened
8 oz ranch dressing (or bleu cheese)
8 - 12 oz Frank's red hot sauce (or any hot wing sauce...the hotter you want it the more you add)
2 cups diced chicken
8 oz shredded cheddar cheese

What you do:
Mix all ingredients together (save about 1/3 of the cheese for the top)
Spread mixture into 9 x 13 pan.
Bake at 350 degrees for 25-30 minutes until hot bubbling.
Add reserved cheese and bake for an additional 5 minutes.

Serve with tortilla chips. You can serve it with celery and carrot sticks too, but seriously, if you are eating something that contains two packages of cream cheese, just get over it and get the tortilla chips!! Save the celery sticks for your New Years Resolution!
