Crock Pot Teriyaki Chicken Recipe

We are just starting the second week of school and it is killing me a little!  I have four kids at four different schools, so from 5am - 9am I am getting them up and where they need to go.  I am trying to be good about dinner and have been trying to remember some of my favorite easy dinner recipes.  Tonight we are having crock pot teriyaki chicken using the recipe from Gimme Some Oven.  I have a couple of different teriyaki recipes that we rotate through, but this one makes everyone happy and the fact that I can put it in the crock pot before noon and have it ready by dinner makes it the clear winner for the first back to school Monday!

Slow Cooker Teriyaki Chicken from Gimme Some Oven

Another thing I love about it is that it uses ingredients that I usually have in the house (soy sauce, rice wine vinegar, garlic, honey).   I don't always have fresh ginger, but I have substituted with ground ginger and it is still yummy!  I have even used dehydrated onions a time or two.

You can get the recipe for Ali's slow cooker teriyaki chicken over at Gimme Some Oven.

3 Healthy Chicken Recipes To Try [Healthy Recipes]

I feel like my kitchen repertoire is getting pretty boring, so I thought I would dig up a couple of easy chicken recipes to add to the rotation this week.  Our Spring schedule is insanely busy, so when I say easy, I mean easy.  Like already have the ingredients in the house, cook everything in one pan, and no need to marinate because that would require me to think about dinner at least an hour before I start cooking it.

The next time we have quinoa for dinner, I am going to make sure to make some extra so I can try this quinoa crusted chicken recipe from Closet Cooking.  I probably won't make it as chicken parmesan, since I have kiddos that don't love red sauce, but I can think of a few recipes that use bread crumbs that could use a quinoa makeover.

I am exited to try hummus-crusted chicken recipe from Gimme Some Oven.  We love hummus and I imagine it keeps the chicken really moist.  Not to mention the recipe is super easy because you can use store bough hummus.

Baked ranch chicken uses fat free sour cream, corn flakes, and ranch seasoning for the coating.  Another quick and easy chicken recipe that uses items I probably already have in my house and isn't completely boring.  You can get the recipe for this one over at Laa Loosh.

If you have any really easy chicken recipes, I would love to see them!  Leave a link in the comment section!

Honey Lime Chicken Enchiladas

I cleaned out my pantry on Tuesday. I don't know about you, but when I clean out my pantry I usually find a few things that are expired, a ton of things I didn't know I had, and one item that I thought I was out of and kept buying...and buying...and buying...until you have more of it than any family could possibly need.

This time that one item was Green Enchilada Sauce. I use red a lot more than I use green. A LOT lot more. But I only had 2 cans of red and like a million cans of green. Okay, maybe only 20, but I am going to have to find some recipes that use green enchilada sauce. Like this one I found on Just Another Day in Paradise:

If you want to make it too, you can get the recipe HERE.  If you have any recipes using green enchilada sauces, please share them with me in the comment section.  And if you don't like green enchilada sauce, I am sure I will be joining you soon from overconsumption.

Spicy Honey Chicken Salad

My sister in law made this Spicy Honey Chicken Salad from Our Best Bites and said it was to die for:

And looking at all the yummy pictures on her favorite food blogs makes me realize how boring my dinners have become, so I am going to add this to our menu.  Hopefully the chicken won't be too spicy and my kiddos like mango and avocados, so at least they will like that part!

You get the recipe for the Spicy Honey Chicken and then throw it in a salad with mango and avacado (yum and yum) and toss it with Honey-Citrus Vinaigrette

And since you grill the chicken, none of this heats up your house!  YAY!

Bisquick Chicken

We have church later than we are used to now that we live in Texas and without my mom or mother-in-law around to make us dinner I am on my own to find something good that I can make quickly every Sunday.

This week I made Chicken coated in Bisquick. And it was GOOD!!

Image from Betty Crocker

I may be the last person on earth to try this, but in case I am not....

You take boneless skinless chicken breasts, dredge them in milk (or egg) and then coat them with Bisquick (you can stir in your favorite spices or even some cheese). Then brown them in a skillet (make sure to use pam or some butter in the skillet to keep the coating from sticking to the pan and not to the chicken) and put them in the oven to bake. I did 45 minutes at 350.

It is good, easy and quick. All of which are super important to me at the moment!

Chicken Alfredo Pot Pie

I love when my sister-in-law posts on her blog. It makes less work for me because I can just steal her post and use it as my own. She never posts anything that I don't LOVE!

But this post I was actually WAITING for! We stayed at her cabin over Labor Day weekend, and when we got there Friday night she had dinner waiting for us! I LOVE HER! And not only was it dinner, it was this:

Chicken Alfredo Pot Pie! It was so good! Just look at the yummy goodness inside:

What you need:

4 cups chopped cooked chicken
4 cups Green Giant Valley Fresh Steamers (from two 12 oz. bags)
1 jar (16 oz) Alfredo pasta sauce
1/2 cup milk
1/4 cup grated Parmesan cheese
1 can (8 oz) Pillsbury refrigerated garlic butter crescent rolls

What you do:

In a large saucepan, heat cooked chicken, thawed vegetables, pasta sauce and milk over medium heat. Stir occasionally until thoroughly heated. Pour into a 9 X 13 Pyrex and cover the top with crescent triangles and then sprinkle with Parmesan cheese. Bake at 400 degrees F for 10-12 minutes or until rolls are golden brown.

I loved the Green Giant Steamers because they were really good and still crisp. Sometimes steamed veggies get a little soggy, especially in a pot pie. But these were PERFECT! If you like pot pies you need to try this one.

And go and tell Erin hello!

Buffalo Chicken Dip

image from Kraft Foods

So a LOT of the fun of New Years Eve is the fun appetizers!

Buffalo Chicken Dip

What you need:
2 pkg cream cheese, 8 oz - softened
8 oz ranch dressing (or bleu cheese)
8 - 12 oz Frank's red hot sauce (or any hot wing sauce...the hotter you want it the more you add)
2 cups diced chicken
8 oz shredded cheddar cheese

What you do:
Mix all ingredients together (save about 1/3 of the cheese for the top)
Spread mixture into 9 x 13 pan.
Bake at 350 degrees for 25-30 minutes until hot bubbling.
Add reserved cheese and bake for an additional 5 minutes.

Serve with tortilla chips. You can serve it with celery and carrot sticks too, but seriously, if you are eating something that contains two packages of cream cheese, just get over it and get the tortilla chips!! Save the celery sticks for your New Years Resolution!
