Popsicle Bar
Back when I was writing this post about popsicles I remember a restaurant that sold only popsicles in New York. Remembered a really great picture I had seen of it online somewhere. I wanted to include it on the post, but couldn't for the life of me remember what it was called.
And while we are on the subject of popsicles, check out these cute striped sticks from Kojo Designs:
Too bad they are spray painted so you can't use them in actual popsicles. I wonder if you could recreate the look with food coloring? But they would probably be really messy!
And if you want to have a popsicle bar of your own at a party, here are some ideas you could use:

Rainbow Pudding Pops
Kelli from Random Thoughts of a Super Mom took pudding and made it into a perfect little rainbow in a cup:
And as if the rainbow pudding itself wasn't perfect, she made it into the perfect summer treat by sticking it in the freezer:
We love to freeze yogurt in the summer, and we might just use this idea with yogurt. And I think we might have to go with a red, white and blue for some Patriotic Pudding Pops for the 4th.

Popsicles
With summer here I have fallen in love with popsicles. We will be spending a lot of time outside (in the pool) this summer and popsicles are the best way to cool off. Well, shaved ice might be a little better, but popsicles are a little more realistic. Especially if you don't have a shaved ice machine!
So here are some popsicles I love right now.
Many, many molds from Growing My Baby:
Felt popsicles from Twelve Crafts 'till Christmas, the only popsicle my kids will be allowed to have indoors:
The Zoku!
If you haven't seen this thing, go check it out at William Sonoma. It is like an ice cream machine for popsicles. It only takes about 10 minutes to freeze them. I won't be spending $50 on one, but I do recommend that you watch the video because there are some fun ideas for making popsicles (that you can use with regular molds too!) My favorite is using a straw to suck out the inside of a half frozen popsicle to make a creamsicle:
And we all know that all you need is a paper cup and a popsicle stick (or an ice cube tray and some skewers!), but here are some other molds to consider:
And a trick for getting the stick to stay up straight on a homemade popsicle mold... put some plastic wrap over your homemade mold and put the stick through the plastic wrap to keep it in place! I got that one from Special Agent Oso!

Popsicle Drip Catchers
Love this idea from Tipnut.com! This summer, when you have a ton of drippy popsicles to contend with, stick the popsicle stick through one of these:

Popsicle Party
I love this image from Better Homes and Gardens:
What a fun way to serve popsicles all at once! I wonder how long they will stay frozen like this? Or if they start to get melty pretty quick? Anyone ever do this? I might have to try it just to see if it works!

Confetti Pops
This cute ice cream pops from Country Living have a little surprise inside:
Inside of each one is a candy bar! You start by pushing a popsicle stick into the middle of a soft centered candy bar (like 3 Musketeers). Then you put a little bit of softened ice cream (about a Tablespoon) into the bottom of a 3 oz paper cup. You then put the candy bar in the cup and surround it with more ice cream. Smooth over the top and place it on a baking sheet. Repeat until it is done and then put them in the freezer to harden.

You will want to use a custard style ice cream for better results. (Cheaper ice creams incorporate a lot of air into them and when they melt and refreeze they aren't as smooth).
Once frozen solid, tear off the paper cup and roll the ice cream pop in colored sprinkles.
I have some red, white, and blue sprinkles that would be perfect for the 4th of July.
