Blackberry Cobbler

I am going to tell you a little secret. I am so not a food photograper!  Oh, it isn't a secret.  That's okay.  I blame it on my iPhone.  I know I could get a phot that is 100 times better if I get out my actual camera, but my Iphone makes it REALLY EASY to take a picture and email it to Blogger.

Oh another secret, technology makes me lazy!

But not lazy enough to not pick berries and bake cobbler.

I did get some cute pictures of the kids picking berries, but they of course are on my real camera.  So what you get is a picture of The Boys shorts.  He was very exuberant with his blackberry picking:



Amazingly I got that mess out of his pants even after being at the farm for 6 hours.  Gotta love Spray n Wash.

Here are the girls on the hayride:





I have better ones, but you can see all of the other kids on the hayride and I try not to but other people's kids pictures on the internet without their permission.

So with all the blackberries I made cobbler.  And I took pictures for you.  With my phone.  Which shows I love you.  Like family.  Because I am obviously not trying to impress you with my photography skills!

Here are the berries:


They were REALLY good!  And if you are anywhere near Marble Falls you need to check out Sweet Berry Farms.  Just beware that if you attempt the Texas shaped maze you will be there for a couple of hours!!

But you can make some super easy and yummy cobbler.

What you need:

2 1/2 cups of blackberries (I use 3, but that is just me)
1 cup sugar
1 small lemon
1 cup milk
1/2 cup butter
1 cup all purpose flower
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract

What you do:

Wash and rinse berries, pat dry.  Put berries, juice from half of a small lemon (or the whole thing if you like lemon) and the cup of sugar in a bowl to sit for 20 minutes.  This is called maseration and the sugar and acid helps the berries give up their juices to make a nice fruity liquid syrup:

Combine the flour, baking powder and salt and then mix in the milk.  Melt the butter and stir that into the mixture, followed by the vanilla extract.

Poor the batter into a greased 8x8 pan and spoon the berries evenly on top:

Then bake at 350 for 20 minutes:


I should have told you to preheat the oven.  So make sure you do that.  And make sure you buy or make some vanilla ice cream to eat with this.  And don't let your kids waste it or make blackberry soup out of it like my girls did.  Only feed it to the people that will appreciate it!

Your kids are super adorable!!! Blackberry picking sounds like a really fun day. I still remember going berry picking with my family when I was a little girl.

We just moved from Cedar Park and LOVED going to Sweet Berry Farm! They have an awesome set-up in the fall with pumpkins, tractors, etc.

I have a friend who is a GREAT photographer in the area and takes amazing photos of kids. She schedules mini sessions at Sweet Berry Farm in the fall for "pumpkin pics". Let me know if you need a recommendation! :)

Thanks for the post, I have never heard of "maseration" before so now I know! I will try this next time I make a cobbler, it looks delish!!
