Chocolate Chip Pudding Cookies

I hadn't heard of using instant pudding in your chocolate chip cookie batter until cousin Ray brought some of the softest, yummiest chocolate chip cookies over to dinner a couple of years ago.  Last night after dinner I made some for the kids and some friends we had over and though I should share the recipe we used, just in case you hadn't heard of it already.

I don't have Ray's recipe (I really need to get it and make sure it is similar) so I used one that my hubby found at Allrecipes:

Soft Chocolate Chip Cookies (with pudding)

What you need:

2 1/4 c. AP flour
1 t baking soda
1 c butter, softened
3/4 c packed brown sugar
1/4 c white sugar
1 (3.4 ounce) package instant vanilla pudding mix
2 eggs
1 teaspoon vanilla extract
2 cups chocolate chips

What you do:

Preheat oven to 350.
Cream the butter and sugars.
Beat in the instant pudding mix until blended.
Stir in the eggs and vanilla.
Blend in the flour and backing soda.
Stir in the chocolate chips.
Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

They are so good!  They might just be your new favorite cookie, unless you like crunchy cookies, and then probably not.  Do you like crunchy cookies?

I'll have to try this. In the past, I had the worse luck with chocolate chip cookies. I still do once in awhile.

I'd never heard of the pudding either but last weekend I made the best cookies with a recipe from allrecipes - and it had pudding in it!

Julie, I do to! Chocolate Chip cookies are probably the one baked good I never am satisfied with. It has gotten a lot better since I moved to Texas (have no idea why they would be different than in AZ...except the humidity!) but these are super easy! And really good! You need to try them!

Nope, we definitely prefer soft! I'll have to keep this in mind the next time I allow myself to make cookies!

Oh, I've never heard of putting pudding in CCCs! Sounds tasty!

You can use any recipe for CCC's. Just measure the package of pudding with your flour. Like if you need 1 cup flour and the pudding is 1/2 cup, use the pudding and 1/2 cup flour. Does that make sense?

I use this recipe all of the time, except I use chocolate pudding, and I use 1/2 choc chips and 1/2 peanut butter chips. They are divine!

This is the cookie recipe I have been using for years and it never fails. You can change up the pudding and mix in flavors and have several combos.

Yes, please! I love how fluffy these look. When my chocolate chip cookies come out of the oven flat, I get cranky.
