Honey Lime Chicken Enchiladas

I cleaned out my pantry on Tuesday. I don't know about you, but when I clean out my pantry I usually find a few things that are expired, a ton of things I didn't know I had, and one item that I thought I was out of and kept buying...and buying...and buying...until you have more of it than any family could possibly need.

This time that one item was Green Enchilada Sauce. I use red a lot more than I use green. A LOT lot more. But I only had 2 cans of red and like a million cans of green. Okay, maybe only 20, but I am going to have to find some recipes that use green enchilada sauce. Like this one I found on Just Another Day in Paradise:

YUM! After I get these kiddies off to school (one went today and the other starts all day kindergarten on Tuesday!), I am vowing to start cooking again, REAL meals that are good for us. Just been snowed under lately; now it's time to dig out from about 8 years of craziness!

I don't have a pantry. Yours must be huge to have all of that stuff in there you didn't remember. I usually buy what we need to eat and we usually eat everything. I'm not a big fan of the green sauce but you can probably just make recipes that call for red sauce and substitute the green.

My pantry actually isn't that big. I used to have a pantry that I LOVED! In this house it is just a small closet (as wide as a door) but the thing is PACKED! I actually have a picture that goes with a post I might get around to posting one of these days!

The reason I didn't see the enchilada sauce was it was burried behind all of the other things. I keep a three month supply of stuff in my pantry, so it gets a little crowded!
