Bisquick Chicken

We have church later than we are used to now that we live in Texas and without my mom or mother-in-law around to make us dinner I am on my own to find something good that I can make quickly every Sunday.

This week I made Chicken coated in Bisquick. And it was GOOD!!

Image from Betty Crocker

I may be the last person on earth to try this, but in case I am not....

You take boneless skinless chicken breasts, dredge them in milk (or egg) and then coat them with Bisquick (you can stir in your favorite spices or even some cheese). Then brown them in a skillet (make sure to use pam or some butter in the skillet to keep the coating from sticking to the pan and not to the chicken) and put them in the oven to bake. I did 45 minutes at 350.

It is good, easy and quick. All of which are super important to me at the moment!

Hmm....I have tried just about every combination of making my own chicken nuggets yet I've never heard of this one. My problem is, when I go to turn it, the crispy skin peels right off, so it's no longer a chicken nugget. What am I doing wrong?

We went from 2-5 church to 8-11 church. I luh-hove it.

Amie,

Make sure that you have butter or some non stick spray in the pan so that it doesn't stick.

Besides the ever helpful crock-pot meals ... I found 2 pretty easy and tasty chicken recipes from All Recipes - Provolone Chicken & Anniversary Chicken. Easy and quick to make - I think about 45 min. total prep & cook time! Let me know if you can't find them.

Those look good. In my never-ending attempt to be independent from my parents, I'm always looking for dinner ideas for my husband and I. We might have to try this tonight. :)
