Confetti Pops

This cute ice cream pops from Country Living have a little surprise inside:

Inside of each one is a candy bar! You start by pushing a popsicle stick into the middle of a soft centered candy bar (like 3 Musketeers). Then you put a little bit of softened ice cream (about a Tablespoon) into the bottom of a 3 oz paper cup. You then put the candy bar in the cup and surround it with more ice cream. Smooth over the top and place it on a baking sheet. Repeat until it is done and then put them in the freezer to harden.

You will want to use a custard style ice cream for better results. (Cheaper ice creams incorporate a lot of air into them and when they melt and refreeze they aren't as smooth).

Once frozen solid, tear off the paper cup and roll the ice cream pop in colored sprinkles.

I have some red, white, and blue sprinkles that would be perfect for the 4th of July.

Those are darling! Target Dollar spot has 2 sets of red/white/blue sprinkles right now. They have non-pariels and jimmies! I got both and red and blue sugar too.
