Happy Columbus Day

I couldn't figure out why we didn't get any mail today until my friend reminded me that there would be no mail because of Columbus Day.

Poor Christopher C. We used to celebrate him, but now it seems only postal workers remember him. At least that is how it is here in Arizona. When MLK day became a state recognized holiday, they no longer let kids have Columbus Day off from school. And the NYSE is open on Columbus Day as well, so it isn't a day of for Hubby either. And if the kids are in school and Hubby is at work then I don't remember!

But since Michelle my belle reminded me, I now feel obligated to celebrate. And she gave me the perfect way!

Pancakes!

We are having pancakes for dinner. Do you get it? Don't worry, I didn't get it at first either. But pancakes are flat. The world isn't!

You can take a moment to laugh now!

Done? Okay, good.

Now I suggest that you drop whatever dinner plans you had and make Christopher Columbus pancakes for dinner!

Because without him, the Eastern hemisphere would be REALLY crowded!!

Pancakes
(because Chris C. deserves more than Bisquick)

Dry goods:
1 Cup All Purpose Flower
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt (Kosher)
1 tsp sugar
Shake to MIX WELL!

The wet stuff:
(for each cup of dry mix you use the following)

2 Tbls melted butter
1 egg separated
1 cup buttermilk

Mix the egg white with the butter milk and the yolk with the butter first THEN mix them together with a whisk (this helps them stay together instead of separating like water and oil!)

Then mix the wet with the dry once your griddle is ready and cook like any old pancake!

We just had dinner but now I want pancakes! :o)

I laughed so hard about the pancakes being flat joke. Pancakes would be great tonight but I am stuck at work.
