Valentines Beets


Beet Ravioli from Epicurious



I was talking to my mother in law about her pink and red dinner the other night and she mentioned that she thought she was going to serve beets.

Beets?

Beets.

They definitely fit the red and pink criteria.  Maybe better than any other food, save the Pomegranate.  But if we are being completely honest, I have never eaten a beet.  And I don't know that I want to.  But if I am going to try beets, I think I would have to go in the direction of this stuffed beet bavioli recipe from Epicurious.

I originally saw it over on Doehler Days and I think she is going to try it out for Valentine's Day dinner too.


Someone talk me into trying beets.

Nooooo! I studied abroad in Russia for a couple months and beets were served at every meal, including breakfast. Personally I couldn't stand them in any of their forms. One morning I thought we had been served a lovely dish of raspberries. I took a huge bite only to realized it was shredded beets! Yuck!

Hm, I would say: try them - try them pickled or as a salad (with mustard, salt&vinegar)

I really like them, but one has to like the earthy taste.

AnnaLe, beets should never disguise themselves as raspberries. That is not nice!

I have to say that I have always loved beets! Pickled are not my favorite but ok. I would recommend that your first try be roasted - so easy. Just peel, cut in chunks, toss in olive oil, add some salt and pepper and put them on tray in the oven at 350 for an hour or so - until tender, turn them a couple of times. Great just like that or on salad! Beet soup is the best too!

I once had a burger at a gourmet burger place and they put beetroot on it. Sounds weird, but it was one of the best burgers I ever ate!
