The Zoku!
If you haven't seen this thing, go check it out at William Sonoma. It is like an ice cream machine for popsicles. It only takes about 10 minutes to freeze them. I won't be spending $50 on one, but I do recommend that you watch the video because there are some fun ideas for making popsicles (that you can use with regular molds too!) My favorite is using a straw to suck out the inside of a half frozen popsicle to make a creamsicle:
And we all know that all you need is a paper cup and a popsicle stick (or an ice cube tray and some skewers!), but here are some other molds to consider:
And a trick for getting the stick to stay up straight on a homemade popsicle mold... put some plastic wrap over your homemade mold and put the stick through the plastic wrap to keep it in place! I got that one from Special Agent Oso!

I think the idea is really cool, but only making three popsicles at a time isn't going to cut it in my house. And 10 minutes until the next batch...well 10 minutes is like a lifetime in little kid time!
I LOVE the watermelon ones. How the heck do you make those?! They're so neat.
Okay . . . I was reading along with my mouth watering when I happened upon the felt popsicles. Now, my mouth is watering and I'm blushing! That' so cool that you put my felt popsicles in your post!!!! Thank you, thank you, thank you! Now, I've got to run so I can figure out how to make some of these amazing edible popsicles with my kids.

Laura, to mak the watermellon ones you half a lime and clean it out, fill it with something red to make the Popsicle ( or even Jello) and when it sets up, you slice it!
I think they used chocolate chips for the seeds, but it is cute without too I think.
The Zoku is great! I haven't found the three at a time thing to be an issue but there's only three of us in the family, so it works. Plus, I'm lucky to have a very patient 3 year old who likes the anticipation of the countdown until his popsicle is done. We really like making orange juice pops for breakfast and I make frozen coffee pops sometimes for a pick-me-up.
I really love all those molds though - a lot of fun!
