Happy Cinco de Mayo

I love Mexican Food and any excuse to eat it is greatly appreciated. But we don't often celebrate Cinco de Mayo around here because we also have a birthday to celebrate. But in case you are looking for a fun treat to celebrate today you must make this:

Agua Fresca

What you need:

4 cups of water
2 cups fresh fruit
1/4 cup sugar
2 teaspoons lemon or lime juice
fruit wedges for garnish

What you do:

Combine water and fruit in a blender. Puree until smooth and then poor mixture through a sieve into a pitcher. Stir in lemon/lime juice and sugar. You may want to add a little more sugar to taste. Garnish with fruit wedges.

Even if you aren't going to celebrate Cinco de Mayo you should try these drinks this summer. Watermelon is actually one of my favorites. You can vary the amounts of sugar, lemon and lime to get the flavor that you like.
