I love potatoes. I will eat potatoes anyway you cook them, except two. I don't like potato salad and I don't like potato soup. Until now.
Last Sunday my mother-in-law made the yummiest potato soup ever! Come to find out she got the recipe from my sister-in-laws blog. You must try this. Even if you don't like potato soup!
What you need:
1 1/2 Cans Chicken Broth
1/2 c Water
5 T Butter, melted
5 T Flour
1 T Minced Onion
1/2 t Salt
2 c Half and Half
1/8 t Oregano
4 C Cubed Potatoes with/without skins
1/2 t Pepper
1/8 t Parsley
Green Onions, Cheddar Cheese and Crisp Cooked Bacon Bits for toppings.
What You Do:
Mix chicken broth, water, minced onions, oregano, and parsley in a large pot and bring it to a boil. Turn heat down and simmer for 5 minutes then add melted butter. SLOWLY stir in flour . Add salt and pepper. Add half and half.
(on a side note, I would melt the mutter in a pan and then make a rue with the flour and add that to the soup...but that is just me!)
Cook until bubbly. Add potatoes. Cook over low to medium heat until the potatoes are tender. (If cooked too fast, the soup will burn before potatoes cook thoroughly)
Now I just need to find a potato salad recipe that I like so that I can say I have never met a potato that I didn't like!
