Chocolate Thin Mint Ice Cream from Live {Made} Simple

I only have one problem with this delicious looking bowl of ice cream.  One of the ingredients is a sleeve of Girl Scout Thin Mint Cookies.  I don't know about you, but I am all out of Thin Mints.  I know people that have the will power to tuck them away in their freezer and enjoy them after Girl Scout Cookie season is over, but I am not one of those people.  No one in this house is one of those people.  So when I try out this recipe for chocolate thin mint ice cream I will have to make my own homemade thin mint cookies using the recipe from Baking Bites.  Either that or I will have to go knocking on the door of the people I know still have them in the freezer and plead for them to share.   So don't be surprised if I come knocking.  You know who you are!
