Creative Oatmeal Combinations

Creative Oatmeal Toppings from O Magazine




I want to love oatmeal.  I want to be the mom that sends my kids to school with a warm breakfast at least part of the time.  But honestly, I am just not a fan.  But after reading the 7 Creative Variations on Oatmeal in O Magazine this month I think there are at least two or three that I am going to give a shot.


Oatmeal 101
In a small pot over medium heat, combine 1/2 cup old-fashioned rolled oats, 1/2 cup water, 1/2 cup milk (cow's, soy, or almond), and a pinch of salt. Stir occasionally, until oats are thick, about 5 minutes. If indicated, stir in additional ingredients until warmed through, then pour into a bowl and add suggested toppings:



Blackberry Pie Oatmeal  (This is the one I am going to try first!)
Near the end of cooking, stir in 1/3 cup blackberries.
Top with: 1 tablespoon chopped walnuts, a few more blackberries, and 1 crushed graham cracker





Chocolate–Coconut Oatmeal (I like the sound of this too, but I am going to leave out the coconut)
Near the end of cooking, stir in 1 teaspoon cocoa powder and 1 tablespoon shredded coconut.
Top with: a few chocolate chips, 1 tablespoon slivered almonds, and a sprinkle of coconut




Fluffy Banana Oatmeal  (I will try anything with bananas at least once.)
Add a thinly sliced very ripe banana to oats at the start of cooking. As oatmeal bubbles, whip the oats vigorously with a fork until banana slices melt away.
Top with: 2 tablespoons chopped salted peanuts and a drizzle of honey

I've made that same statement. "I want to love oatmeal." Let me know if it works out, because so far I haven't found any flavor I like!

I also "want to love cucumbers" ...but I haven't figured that one out either.

I, on the other hand love Oatmeal,as do my kids. It started out as a cost-cutting measure since a canister of Rolled Oats is usually $3-4. Turns out my kids actually prefer it. I make mine with brown sugar, pumpkin pie spice and vanilla. I've experimented with fruits, but my younger one doesn't like any chunks in his, so I tend to leave it out. I occasionally sneak in some finely chopped apples though. I will definitely be trying out some of these recipes, thank you!

I like oatmeal, but I'm definitely open to changing it up. Great ideas!
