Pumpkin Spice Whoopie Pies

My sister in law called me yesterday and asked me to make an announcement on my blog.  She reads a lot of recipe blogs, and the bloggers keep talking about a pumpkin shortage.  They also keep mentioning that because of said shortage, they are buying up ever can of pumpkin on the shelves when they see it.

 She hasn't been able to make the pumpkin cinnamon rolls I posted because all of her stores are out of pumpkin.  Plus she is pregnant, and when a pregnant lady wants some pumpkin puree she should get some.  So for her sake, don't buy up all of the pumpkin just because there is a shortage.  Share the love!

She is actually convinced that there isn't really even a shortage.  Just a puree pumpkin conspiracy.

Either way, she is really going to need some pureed pumpkin when she sees these Pumpkin Spice Whoopie pies with Orange Cream Cheese Filling from Confessions of a Cookbook Queen:

This happened 2 years ago with candy corn. It couldn't be found anywhere! Target's store decorations were photos of candy corn and they still didn't have any. Now pumpkin puree? My god, what is the world coming to?

I actually saw a think about this on a news program a couple of weeks ago...they claimed that it will be back on the shelves by the end of the month, but yeah - by then you will probably have enough "mob mentality" going on that people will be waiting in line for the trucks to be unloaded! Calm down people, how much pumpkin do you REALLY go through in a year? Leave some for the rest of us, who just want these whoppie pies...and pumpkin pancakes....and maybe that pumpkin trifle (and, oh, don't forget pumpkin choc chip cookies!!)! We'll still buy our pies from Costco (hello, BEST pumpkin pie ever!), but we just need a few cans to cure our pumpkin treat baking cravings! :)

We have pumpkin at our Fry's in Tempe, tell your sister to stop by the one on McClintock and Guadalupe. Saw it there yesterday:)

Adele, I totally agree! And pureed pumpkin doesn't have a very long shelf life, so you can't really stock pile it.

I went to every grocery store trying to find it, and everywhere was all sold out!! Luckily, my friendly neighborhood Costco had tons, so I stocked up!!! Unfortunately, you have to pay through the nose for it.. I just remind myself that being able to make my pumpkin spice cake cookies this Fall is worth it :)

I heard that there was a pumpkin shortage this year too, but when I went to the store the other day, they had plenty.

I have not been able to locate a can of pumpkin in any of my supermarkets. I just figured it was 'too early' in the season, but now it all makes sense. Now I must find some,lol.
