My mother in law kept telling me about this black bean and corn salsa that they fell in love with. In never got a chance to try it while I was in AZ. But last night I found a recipe on Little Birdie Secrets for Cowboy Caviar and the ingredients sound pretty similar. But this version has avocado! YUM!
I am going to have to give it a try this week. I just need to pick up a fresh avocado. You can find the recipe HERE.

Oh I love that stuff...now my mouth is watering. I can eat it like it's water.
Now that you live in Texas, you can also add this one to your repertoire--a jazzed version of Texas caviar. It's healthy too!

Love black bean salsa! I haven't tried it with avacado, but I will now!
The one I make has red onion, cilantro, then canned beans, corn & tomatoes. Super easy! Best if you let it chill for a bit b/f sreving.
