Easter Dinner

Easter is the first major holiday that I will be away from family.  Valentine's Day was a big one for us, but most of that is centered around baked goods and store bought treats.  Easter is the real deal.  So while I try to figure out how to cook a Ham for three people (because the girls never end up eating meat) I am going to dream of what I wish Martha would make for me for  Easter dinner:

Ham with Apricot Glaze:



Asparagus Gruyere Tart:


Twice Baked Potatoes:


and Vanilla Custard:

Oh man that asparagus look great. I am gonna look that recipe up. I am so tired of Tom's green beans. Of course all the grands have already called about the green beans. They used to know Papaw would fix green beans but we threatened to stop making them so they all call ahead now days. He cooks them the old fashioned way with fat bacon. This is the only place they eat them like that. All the blessings of Easter to you and yours.

I know how hard it is to be away from family. Being in the military, we are often on our own for the holidays. Thankfully, we have some amazing friends that have become our family away from home.

If you wouldn't mind passing along my address as well, I'd really appreciate it now that our pantry is scattered all over our home and our basement has become an indoor pool and spa!

We always buy a huge ham for just the two of us. Then we use the leftovers for all sorts of good meals. A really easy one is to fill the bottom of a pan with ham, then sprinkle mozzarella generously, add some green onions, and the top with corn bread batter. It's amazing. We also freeze some of the leftovers so that we don't risk any of it going bad.

I know how you feel. This is the first Easter I will be away from my family and Easter is a BIG thing at our house. Also, it's my little sister's birthday too...and for the first time in 19 years, I'll be missing that.

I want Martha to send us some love too!

Everyting looks so tummy! My new favorite way to eat aspargus, wrapped in prosciutto with a soft cheese (we used goat cheese & cream cheese mixed) & roasted in the oven. YUM!

QMM, My mom cooks green beans with bacon fat too. That is the only way she will make them. :)

It is hard being away from family at the holidays. But I hope you and your hubby and kiddos have a very happy and joy filled Easter together!
BTW, if Martha stops by will you send me a piece of that aparagus tart. My goodness that looks so fancy and yummy!

That just made me laugh :). Martha already has reservations at my house thankyouverymuch! :)

That ham looks & sounds so good! I've never cooked a ham, and would just stick to Costco's spiral slice if I did, because I'm too scared to cook big things like that. I did make my first roast (Cafe Rio sweet pulled pork recipe) last weekend, and it was amazing!!!

I do want to make the twice baked potatoes sometime, I wish I had some to eat right now!
