Mini Turtle Cheesecakes

Another one from Salt and Chocolate, (one of my new favorites!)  I made these for my sister-in-laws baby shower last year.  They are really yummy.  They need more than the teaspoon size scoop that the recipe recommends though.

I have been looking for treats to make for my sister-in-law's shower and I think we may have a winner!!


Mini Turtle Cheesecakes

8 oz of cream cheese softened to room temperature
1/4 cup sugar
1/2 teaspoon of vanilla
2 teaspoon AP Flour
4 oz dark chocolate, melted
1/4 cup sour cream
1 egg
Caramel dessert sauce and Pecans

Preheat oven to 325. Line mini muffin pan with paper cups. In a bowl combine the cream cheese, sugar and vanilla until light and creamy. Add in the flour and blend until smooth. Pour in the chocolate and sour cream and mix to combine. Add in the egg and mix. Use a teaspoon size scoop (I used a Tablespoon size scoop and they were still a little small) to add the cheesecake batter to the muffin cups. Bake for 12-15 minutes or until the center is almost set. Let cool to room temperature for at least 10 minutes then refrigerate for 8 hours to overnight. Before serving drizzle on some caramel sauce and top with a pecan.

I'm a freak about any desert that is 'mini'. Those look seriously yummy!

I've been into the whole cake ball/bite thing as of late but I could totally make a detour for cheesecake!
