Peanut Butter Cake Mix Cookies

Back in October, I left a comment on a blog post about using cake mixes to bake other things. At least I THINK that is what the post was about. It was 5 months ago, I don't really remember!

She emailed me and asked for the recipe. I said sure. About a week later I emailed her to let her know that I hadn't forgotten about it and would still get the recipe to her. Every time I clean out my email I see that conversation and think, oh I need to do that!

Yeah, so, un, here is the recipe. It is good, but probably not wait 5 months for it good! It is great if you are in a hurry and these puppies stay soft FOREVER!! I like to add a little more peanut butter though!

What you need:

1 pkg yellow cake mix
1 c. peanut butter
1/2 c. vegetable oil
2 T. water
2 eggs

What you do:

Preheat the oven to 350 degrees.

With an electric mixer, mix all of the ingredients together.

Drop rounded teaspoonfuls on ungreased cookie sheet and make the cool fork criss cross on top to squish them down.

Bake 10-12 minutes.

Makes about 4 dozen if you don't eat half of the dough like I do.

I made these last night.
So easy & a hit in out house.
I'm actually doing something I shouldn't be & eating a few right now (@8am). I have to say they are much better warm..but good either way.
