Peppermint Bark and Cathie Filian

I already sort of love Cathie Filian. And then I find this yummy recipe for Peppermint Bark (with an equally yummy picture) on her site. Doesn't Cathie know that she doesn't have to tempt me with Peppermint Bark if she wants to be my best friend. All she has to do is ask!

This is what you need:
12 oz. quality white chocolate, finely chopped
30 red-and-white-striped hard peppermint candies, coarsely crushed (about 6 ounces)
12 oz. bittersweet or semisweet chocolate, chopped
1/2 cup whipping cream
1 Teaspoon peppermint extract

This is what you do:
Line the cookie sheet with a 12" length of foil.

Combine bittersweet/semisweet chocolate, whipping cream, and peppermint extract in a bowl (use a double boiler if you have one, but if not but the bowl over a saucepan of barely simmering water, but don't let the bottom of the bowl to touch water) until chocolate is melted and smooth.

If we are being honest here I would probably do this in a glass bowl in the microwave. Melt it a little and then stir! Melt a little then stir! Not quite as professional, but I am no Cathie!

Pour the chocolate onto the foil. Using the rubber spatula spread an even layer of chocolate over the foil. Sprinkle half of the crushed peppermints over the chocolate. Chill in the refrigerator until set, about 20 minutes.

Remove the chocolate and peppermint from the refrigerator. Melt the white chocolate following the same melting directions *cough*cough*microwaveit*cough*cough*

Pour all of the white chocolate over the chilled chocolate and peppermints. Using the rubber spatula spread the white chocolate in even layer. Top with the remaining crushed peppermints. Refrigerate until very cold and firm, about 25 minutes.

Once hardened, use your hands to break the bark into chunks. Keep refrigerated until you are ready to serve and then let stand at room temp for 15 minutes.

Thank you Cathie. I will be blaming you for at least 5 of the 20 lbs I gain this Christmas. But I will still be your best friend!

I love peppermint bark and I want to make it for Christmas gifts but there are so few people who actually like the peppermint/chocolate mixture. More for me I guess!
