Microwave Peanut Brittle

This is usually where I post the cookie swap recipe of the day. But honestly, I am a little over cookie recipes at the moment! I really intended it to be a fun way to feature some blogs of my readers...but that isn't how it turned out. So, I am putting it away. Just like I put away my Christmas decorations early! But I am going to give you a recipe anyways. For peanut brittle!

Have you ever made peanut brittle? Big old candy making pain in the butt! In my family we take the easy way out. We make it in the microwave. And it is yummy! Really yummy. And it is really easy. Even easier if you have a sister that does it for you! Thanks Ninny!

What you need:

1 cup sugar
1/2 cup corn syrup
1 cup roasted, salted peanuts
1 teaspoon butter
1 teaspoon vanilla
1 teaspoon baking soda

What you do:

In a glass bowl stir together sugar and corn syrup. (You have to really mix it together!)

Microwave on high for 4 minutes.

Stir in peanuts and microwave for 3-5 minutes, until golden.

Add butter and vanilla to syrup and mix well. Microwave for 1-2 minutes more until peanuts will be lightly browned. The syrup will be VERY HOT!

Add the baking soda and gently stir until light and foamy. Pour mixture onto greased cookie sheet. Let cool until hard. (1/2 - 1 hour...or you can stick it outside in the cold and it takes like 15 minutes.)

Break it up and store it in an air tight container.

This reminded me to search online for "organic corn syrup" (to see if it was an oxymoron). We've been trying to avoid corn syrup - it has a high glycemic index - but I adore peanut brittle beyond what is considered normal and would love to make my own (we grow our own peanuts). Mmmmm.
