Cookie Swap: Ho Ho Snowballs


This is a no bake recipe that I found on Christmas-Cookie.com.

What you need:

12 oz white chocolate chips
1/4 c heavy cream
2 T bourbon (substitute an additional 2 tablespoons of heavy cream if you are making these for kids or teetotalers like me)
6 oz slivered almonds, very finely ground
1 1/2 c sweetened flaked coconut

What you do:

Place chocolate chips and cream in a medium bowl set over a pan of hot (not boiling) water; stir until melted and smooth.

***I interrupt this recipe because I don't have a double boiler and I am not good at balancing bowls of chocolate over pans of hot water without making a mess or injuring someone.***

I would warm the cream in a saucepan (you have to make sure to keep stirring it so it doesn't burn on the bottom) and them remove it from the heat and add the white chocolate chips. Of course I would then just drink it straight from the pan because white chocolate ganache is YUMMY and I don't like coconut...but that really doesn't have anything to do with the recipe!

***Now back to the regularly scheduled recipe***

Stir in the bourbon (or the additional 2T of cream) and almonds. Spread in a lightly greased 8"x8" baking pan. Chill for about one hour, until firm. Cut into one-inch squares; roll each square into a ball, then roll in coconut. Keep chilled. Makes about 5 dozen.

Lots of yummy & fun ideas! We just purchased similar aprons from Kohls and had a blast making cookies in them on Saturday! We took a few photos of the kids cooking in them and put them on an apron (www.shutterfly.com) for one my Mother in law's Christmas gifts. They are too cute!!
