Cut up some of the leftover turkey and mix it with mayo and curry powder. Spread the turkey/mayo/curry mixture on a slice of pumpernickel bread. Lay the open face sandwich on a cookie sheet, top with grated cheese and put it under the broiler just long enough for the cheese to melt.
Deanna has actually made it with rotisserie chicken which sounds yummy and if you love it you won't have to wait until Thanksgiving next year (or cook a Turkey on some random day) I think I might close the sandwich and use my panini grill to melt the cheese. Yum!

This does sound yummy except I don't like Rye or Pumpernickel bread. I will have to try it on Wheat!!
What I like to do with leftover turkey is make turkey pot pies. They are so good! I make a bunch and put them in my deep freeze for whenever I don't feel like cooking!
This sounds yummy. I don't like those kinds of bread but I am sure it wuold be just as good on white or wheat.

Oh yes, I love sandwich melts!!!! Do you have a Honeybaked Ham store near you? The one near me makes sandwiches & they're incredible!!!!! I am hungry so it just had me thinking.
