Cupcakes for Dinner

And they actually ARE dinner.

I present Meat Loaf cupcakes with Mashed Potato frosting.



You can get the recipe at Weddify if you really want it. I am sure they taste fine, but I don't think I could eat them.

My mother-in-law frosted a sandwich made with pink bread in cream cheese once. It was a good sandwich, but none of us could eat it. It looked like a cake. A pink cake with white frosting. But it tasted like a sandwich. My brain couldn't wrap itself around it.

Why would someone frost a sandwich with cream cheese. Oh just wait until Valentine's Day rolls around! One of my FAVORITE family holidays! We don't do the whole mushy I love my spouse stuff on Valentine's Day. It is fun celebrate the people that you love and only eat things that are red, pink and white...and chocolate. You can always eat chocolate.

I'm with you, I don't think I could wrap my mind around this one although I like the idea. I may have to borrow your V-day idea. I think that is FAB!

I am not sure that I would like this dish. It kind of reminds me of those casseroles that use mashed potatoes as the topping. Never was big on those.

Kacey, my mother-in-law has a way of making every holiday pretty special. For Valentine's Day we all go to her house for the Pink and Red dinner. And then we take turns sneaking out to the front door to leave treats for each other. You knock and then sneak back into the house and pretend like we don't know what is going on!

The treats are little things that everyone brings for each other. Homemade treats, a little Valentine's decoration, etc. It is probably one of my top three favorite holidays to celebrate!

You know, now that I am thinking about it...my kids would probably LOVE this! I might have to try it. Maybe when there is a babysitter so I won't have to eat it! ;D

I made these once for April fools day and my family loved them. Another fun one is turning pound cake and frosting dyed orange into fake grilled cheese sandwiches. Totally fooled my GS troop with that one!
