Banana Cupcakes

Last night Lou La had the snack for Family Home Evening. When you have the snack you get to choose what it is AND you have to help make it.

Lately she has come up with some REALLY great ideas! Last time we had Orange Brownies (just make a box of your favorite brownie mix and use orange juice instead of water) and they were YUMMY! Last night she wanted banana cupcakes with chocolate frosting and blue sprinkles. Luckily I talked her out of the sprinkles!

Here is the recipe we used was super easy:


What you will need:

1 c. butter
1 c. sugar
1 beaten egg
1 c. mashed bananas
1 1/2 c. flour (I used cake flour and they were SUPER soft and fluffy!)
1 tsp. baking soda
1/8 tsp. salt
1 tsp. vanilla

Beat butter, sugar, egg, banana, and vanilla together in a large bowl and set aside.

Sift dry ingredients (flour, baking soda, salt) together and add to wet mixture and beat well.

Fill greased cupcake tins (or use cupcake wrappers...I used fruit and nut cups! My new
favorite) 2/3 full of batter. Bake at 400 degrees for 15 to 20 minutes. Makes 14 large
cupcakes.

We frosted our with chocolate cream cheese frosting. I made it SUPER easy! Equal parts cream cheese, melted chocolate (I used chocolate chips because that is what I had on hand) and powdered sugar. Melt the chocolate chips, stir in the cream cheese and then sift in the powdered sugar and beat until mixed.



The best part of making cupcakes from scratch (well at least the best part when you are trying to watch the amount of sweets you are eating) is that I only made 1/4 of the recipe. We ended up with 5 medium size cupcakes, one for everybody. No temptation to eat two...or to get up in the middle of the night and eat 7!
