Neiman Marcus Chocolate Chip Cookies

I made these this weekend. If you love the cookie that is a little crunchy then these are for you!! I didn't use the expresso coffee powder (even though I bet it would taste yummy!) and I wasn't at my house so I didn't use MY ingredients (by which I mean my absolutely WONDERFUL Mexican Vanilla that everyone should use!!), but they came out pretty good. I am going to have to try them again at home and see if I get a different/better result. And I was impressed that it says it yeilds 2 dozen and this is the first time in my LIFE that I have actually gotten the right yield! I made 2 dozen cookies!

Hubby has me on a search for the perfect chocolate chip cookie. Although these wouldn't be my favorite they are pretty good. Unfortunately I think I am going to find that butter flavored crisco (which I refuse to use) is going to make the cookie I am looking for! *sigh*

But here it is:



Ingredients

1/2 cup (1 stick) butter, softened
1 cup light brown sugar
3 tablespoons granulated sugar
1 large egg
2 teaspoons vanilla extract (I used 3 teaspoons...I always use more!!)
1-3/4 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/2 teaspoons instant espresso coffee powder (I omitted this)
1-1/2 cups semi-sweet chocolate chips


Directions

1. Preheat oven to 300 degrees. Cream the butter with the sugars using an electric mixer on medium speed until fluffy (approximately 30 seconds)

2. Beat in the egg and the vanilla extract for another 30 seconds.

3. In a mixing bowl, sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in the espresso coffee powder and chocolate chips.

4. Using a 1 ounce scoop or a 2 tablespoon measure, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2 inch circle. Bake for about 20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie. (this might have been why mine were crunchier...after 20 minutes they were not done...and I left them in for a LOT longer...)

Yield: 2 dozen cookies (which I ACTUALLY got!!)

These sound really good but I have a recipe for Neiman Marcus Chocolate chip cookies and it's totally different. I didn't know there was more than one. Here's mine:
Neiman Marcus Chocolate Chip Cookies

2 cups butter

4 cups flour

2 tsp. soda

2 cups sugar

5 cups blended oatmeal

24 oz. chocolate chips

2 cups brown sugar

1 tsp. salt

1 8 oz. Hershey Bar (grated)

4 eggs

2 tsp. baking powder

2 tsp. vanilla

3 cups chopped nuts (your choice)

Measure oatmeal and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla, and mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet or drop by teaspoonful onto the cookie sheet.

Bake at 375 degrees for 8 to 10 minutes, or 10 to 12 minutes for a crispier cookie.

Makes about 10 dozen cookies.

These are so good. Especially if you like your cookies crispy on the outside and chewy in the middle!

Those look so good! You know if you ever need a taste tester... We ARE just over the fence... :) Have you ever looked at the link called "Chef Jenny" on my blog? Go there and search for choc. chip cookies. She uses coconut oil and loves the results. It holds up the cookie like shortening would but is a very healthy oil. I keep wanting to try it but haven't yet.

I actually got my NM cookie recipe from their website. There is a recipe that everyone at one time or another got in an email attached to a story about how the lady asked for the recipe and they gave it to her, but charged her like $250 or something.

NM posted their recipe because they say the story isn't true.

Chef Jennys blog always makes my computer freeze! I don't know why, but it makes me sad! I will have to look for her recipe! Coconut oil sounds yummy!!!
