Ice Cream Sandwich Pops

I am loving the idea of making a cute desert with store bought ice cream sandwiches.  Yesterday it was strawberry short cake:

And today it is an Ice Cream Sandwich Pop from Living Locurto dressed up for the 4th of July:


You could even break out the cookie cutters and get them in a cute star shape.  Plus they sell the Klondike sandwiches that are more square.  They would work really well.  And you could eat all the extra edges while you were making them!

Am I the only one that does that?
