image from avacado centralOne of my favorite (like I could eat it everyday and if I was stranded on an island and could only choose one meal it would be this one because it is that good) is Tortilla soup. Now I have a fancy recipe that calls for me to thaw out chicken, but I also have a recipe that comes COMPLETELY from cans. And it is GOOD!
What you need:
1 can chicken broth (14 oz)
2 cans cooked chicken breast (12.5 oz) (I buy a 6 pack of canned chicken every time I set foot in Costco. It is perfect for soup and for chicken salad!)
1 can kidney beans (15 oz)
1 can corn (15.25 oz)
1 can diced tomatoes (14.5 oz)
1 can diced green chiles (4oz)
1 can Enchilada Sauce - I prefer red (10 oz)
Open all of the cans, drain the chicken, corn and beans. Then pour everything else into a pot, stir and let simmer on low until warm.
Serve alone, or with tortilla chips, cheese, avacado, and sour cream on top.
It makes enough for my family of 5 to have our fill for dinner and for me and hubby to each have a bowl for lunch the next day.
The best part is my kids can make this all by themselves!! And that works for me!
