Molasses Cookies



This cookie recipe belongs to my mother in law. My sister-in-law posted it on her blog and I am stealing her picture. Thanks Re!

Molasses Cookies with Candy Corn

Ingredients:
3/4 cup (1 1/2 sticks) unsalted butter
1 cup packed brown sugar
2 cup all-purpose flour, sifted
1/2 tsp salt
2 tsp ground cinnamon
1 tsp ground cloves
1 tsp ground ginger
1 large egg
1/4 c molasses
1 tsp baking soda
granulated sugar
candy corns

Directions:
Beat butter and brown sugar in large bowl until light and fluffy. Add egg and molasses and beat until incorporated. Combine flour, salt, cinnamon, cloves, ginger, and baking soda in a large bowl. Slowly add the 'dry team' (flour mixture) to the 'wet team' (butter mixture) and beat until well blended.

Refrigerate dough until firm (at least 2 hours)

Preheat oven to 350°F. Line cookie sheets with parchment paper. Shape dough into 1-inch balls and roll in granulated sugar. Place on cookies sheets 2 inches apart. Bake 1 sheet at a time, until firm, about 9 minutes.

Halfway through the baking time (around 5 minutes), pull sheet out of the oven and place your candy corns on the cookies. Return immediately to the oven and cook the remaining 4 minutes or so. Let stand briefly then remove to a rack to cool.

They are good without candy corn too!

I did see this over on your sis-in-law's blog. :-) I would've never put these two together -- but I'm just going to have to try it! I'm intrigued; and heaven knows I've got the leftover candy corn!
