These cute sandwiches are made from strawberry ice cream and wafer cookies. You can see the recipe for them over at Parents.com and you can even get the recipe for these heart shaped ice cream sandwiches:
Or you can buy regular ice cream sandwiches and cut them with a heart shaped cookie cutter. Klonkie makes square ones that would work really well. You could even roll the edges in red sprinkles to make them more festive.
Dessert is always the easiest part of Valentine's Day! Now I just need to figure out what we are serving for the pink and red dinner!
