Cucumber Sandwich

I love cucumber sandwiches. I didn't think I would, but I do. My mother-in-law makes them for showers and parties sometimes and they are yummy! And they are cute. Dainty little sandwiches with a nice circle slice of English cucumber on top.

Then I saw this:

and now I love them even more! Dots and stripes! Even more fun! And I love the different shapes. The triangles and rectangles! I am thinking I might have to use my cookies cutters the next time I make them!

And they are so easy to make!

what you need:

1 loaf cocktail bread
2 pkgs of cream cheese (8oz each)
1 pkg dry Italian dressing
English cucumber
Mrs. Dash or Lawrys

what you do:

mix the cream cheese and the pkg of Italian dressing. This is easier to do if the cream cheese is room temperature. Spread the mix on the bread and put a slice of cucumber on top. Sprinkle with Mrs. Dash. I am pretty sure my mother-in-law uses seasoned salt like Lawrys.

Then have a tea party and eat them!

Those do look yummy. If you love cucumber try putting a few slices in your water. YUM so light and refreshing!!

Mmmmm cucumber water! Yum!

One of my favorite party punches is a limeade made with canned limeade and 7up and then you float cucumbers in it! SO YUMMY!

These are deelish!! I have them every time i take a glass melting class! We love them! We put the slices on mini bagels. We also put cucumber slices in a glass of ice water, very refreshing!!!

Cucumber sandwiches are really good. The ones that I have made in the past are a little different. I usually blend the cucumber up as part of the spread. I think I like the idea of just cutting up a cucumber.
