Thin Mint Truffles from Cookin' Cowgirl
I am a huge fan of an Oreo truffle, which makes these Thin Mint Truffles, made with Girl Scout cookies instead of Oreos, easy to love. And too make them even better, they are dipped in mint chips! Y-U-M! Of course, these truffles are the kind that are better when someone else makes them for you, because then you don't have to use up your Thin Mints!
